Butter and Soy Sauce Roasted Chicken – Gluten Free
This is a simple butter and soy sauce marinade for juicy golden brown roasted chicken.

  1. Pre-heat oven to 375c. Melt butter. Mix melted butter, soy sauce, lemon juice, thyme, oregano, pepper and garlic powder with whisk.
  2. Place chicken thighs in roasting pan skin side up. Pour mixture over thighs and coast all sides. Note: if thighs are very cold the butter may seize up on you. Try and leave hardened butter on the top of skin and it will melt and coat chicken when put into the warm oven.
  3. Add water to bottom of roasting pan. Place roasting plan in oven.
  4. Baste chicken with pan juices every 10 minutes to get skin golden brown.
  5. Roast until juices run clear.
