  1. Add oil to pot and heat to medium high. Add pork and brown on all sides.
  2. Add minced garlic and onion and saute for a minute until garlic is fragrant and lightly colored. Add soy sauce, vinegar, water, pepper, sugar and lastly bay leaf. Stir to mix pork and liquid and bring to boil.
  3. Turn heat to medium low and simmer for 45 minutes until pork is tender. Sauce will reduce while cooking. Add more water if pork requires more simmering.
  4. Serve with jasmine rice.
